Simple Koji Recipes

Koji Salt Seafood Chowder


Take equal parts carrot, celery, onion and saute with butter. Then add three cups of whole milk, can of clams and or shrimp, diced potatos, corn and peas. Then add one tablespoon of Koji salt, a pinch of dried thyme and a bay leaf. Simmer for 5 minutes.You can add some Koji salmon for extra goodness.

Koji Fried Chicken


Boneless skinless chicken thighs are brined overnight in 1 litre of water 4 tablespoons of Koji salt, one juiced lemon, one chopped onion, sprig of fresh Thyme, rosemary and cracked pepper. Drain from the brine, toss in flour and deep fry for 8 minutes at @325 or until goldon brown.

Koji Salt Shrimp


Saute some prawns in butter and vegetable oil 1 minute per side. Then deglaze the pan with 1/4 cup of white wine and add a teaspoon of Koji Salt, 1/2 teaspoon each of garlic, ginger, lemon grass, lemon juice and a splash of sesame oil. Toss it all together and serve by itself or on noodles. 

Koji Salt Almonds

Mix together 1 tablespoon of Koji Salt and one teaspoon of maple syrup. Take 1 cup of, unsalted all natural almonds and toss in Koji maple mixture until fully coated. Transfer to a parchment lined baking sheet and bake @ 350 for fifteen minutes. Stir once during baking, half way at the 7-8 minute mark. Let cool and enjoy! Bet you can't have just one!  

Koji Chicken Curry


 Cut a chicken breast into 4 medallion slices and pan fry 3 minutes per side until done. In a sauce pan combine and saute a finely diced shallots until translucent. Then add 1 can of coconut milk, 1 teaspoon each of garam masala, turmeric, koji salt and a splash of lemon juice. add chicken into sauce, toss together and serve with rice

Koji Salt Roasted Vegetables


Take some root vegtables of your choice. Potatoes and beets turn out really nice. Toss them in a tablespoon of Koji Salt and olive oil. Fresh herbs of your choice like rosemary, thyme, oregano and parsley. Toss it all together and roast in the oven at @375 for 25 minutes. This can be done with almost any vegetables. The only difference would be cooking time.
